Cathy Fisher's Tangerine Applesauce

4 servings (about 3 cups)

2 lbs apples (about 4 medium), peeled or unpeeled, cored and chopped
1 cup tangerine juice (or orange juice or water)
1/2 teaspoon cinnamon
1/4 teaspoon ground nutmeg

Preparation: about 10 minutes. Cooking: 30 minutes.

Bring the apples, tangerine juice, cinnamon, and nutmeg to a boil in a medium saucepan over medium-high heat, uncovered.

Reduce the heat to low, then cover and cook at a low boil, stirriing occasionally, for 20-25 minutes.

The applesauce is done when the apples have softened. If they are soft but still chunky, serve as is, or use a potato masher or food processor to achieve a smoother consistency.
