Vegetable Stock/Broth
- collect mushroom stems, fennel branches, peelings, etc.
- a chopped onion, garlic cloves, rosemary sprigs, thyme, chopped fresh ginger, unpeeled
- in large pot w 3 qts water
- bring to boil
- lower to simmer, simmer for 15-30 minutes
- strain
- serve or refrigerate
